🍯 Sweet & Crunchy Pecan Coconut Bites (No Bake!)

Hey sweet friends! 👋 If you’re craving a little something sweet but don’t want to turn on the oven, these no-bake pecan coconut bites are a cozy treat you’ll want to keep around. Perfect with a cup of tea or as a quick pick-me-up in the afternoon! 💕

Ingredients:

  • 1 cup chopped pecans 🥜
  • 1 cup unsweetened shredded coconut 🥥
  • 1/2 cup natural peanut butter
  • 1/4 cup honey or maple syrup 🍯
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Directions:

  1. Toast the pecans & coconut:
    In a dry skillet over medium heat, toast the chopped pecans and shredded coconut for 3–5 minutes, stirring often, until golden and fragrant. Let them cool a bit.
  2. Mix the gooey stuff:
    In a medium bowl, combine the peanut butter, honey (or maple syrup), vanilla extract, and salt. Stir until smooth and creamy.
  3. Combine & chill:
    Add the toasted pecans and coconut to the bowl and mix everything together. It should be a thick, scoopable mixture.
  4. Roll into bites:
    Using a spoon or small cookie scoop, form into bite-sized balls. Place them on a parchment-lined plate or tray.
  5. Chill to set:
    Pop them into the fridge for 20–30 minutes until firm.
